Moms Chicken Pot Pie

  1. Chop chicken breasts into small cubes.
  2. Brown the chicken in a little oil in a big pot. (Optional) Add chopped onions and cook until softened.
  3. Add one cubed potato to the pot.
  4. Cook until the chicken and potato are tender, stirring occasionally.
  5. Stir in 1 can of cream of chicken soup and about half a can of milk and stir.
  6. Add about 1 cup of frozen mixed vegetables (roughly half of a small bag).
  7. Season with salt, pepper, and poultry seasoning to taste.
  8. Check the consistency โ€” if it needs to be soupier, add more milk.
  9. Pour the mixture into an 8x8 casserole dish that already has a bottom crust in it.
  10. Place the top crust over the mixture. Pierce the top crust 3-4 times with a knife to allow steam to escape.
  11. Bake at 375ยฐF (or your preferred temperature) for 35โ€“45 minutes, or until the crust is lightly browned and the sauce is bubbly around the edges.
