Moms Chicken Pot Pie

- Chop chicken breasts into small cubes.
- Brown the chicken in a little oil in a big pot. (Optional) Add chopped onions and cook until softened.
- Add one cubed potato to the pot.
- Cook until the chicken and potato are tender, stirring occasionally.
- Stir in 1 can of cream of chicken soup and about half a can of milk and stir.
- Add about 1 cup of frozen mixed vegetables (roughly half of a small bag).
- Season with salt, pepper, and poultry seasoning to taste.
- Check the consistency โ if it needs to be soupier, add more milk.
- Pour the mixture into an 8x8 casserole dish that already has a bottom crust in it.
- Place the top crust over the mixture. Pierce the top crust 3-4 times with a knife to allow steam to escape.
- Bake at 375ยฐF (or your preferred temperature) for 35โ45 minutes, or until the crust is lightly browned and the sauce is bubbly around the edges.
